Study on the Production of Cellulase by Using Aspergillus Oryzae and its Application on the Green Coffee Treatment

The objective of this study was to investigate the production microbial cellulase by using Aspergillus oryzae and its application in treatment coffee. producing method used for microbe medium submerged fermentation with malt extract medium. determining activity spectrophotometry at wavelength 540 nm 3,5-DNS reagent measure reducing sugar (the product enzymatic reaction). Then, applied on green Robusta coffee bean enhance extraction total soluble solids. result showed that 6% (v/w) 50°C enzyme treatment, lasting 24 hours, solids highest 4.47±0.06°Brix. efficiency improved 21.79% compared control. This could be improve quality products.
